Green tea cup cakes for green day

We had a green food day at work on Saint Patrick’s day so I made green tea cup cakes.

Here is the recipe. Makes about 25 middle size cupcakes.

+ Ingredients +

*110g Butter (Bring it to room temperature)
*3 cups Flour
*2 cups Sugar
*2 Eggs
*2 Egg yolks
*2 teaspoons baking powder
*1/8 teaspoon salt
*1 cup milk
*1 tablespoon green tea

+ Directions +

1.Preheat the oven to 180c
2.Beat the butter using hand mixer on high speed until soft and light color.
3.Add sugar on medium high speed until it becomes fluffy.
4.Add 2 eggs + 2 egg yolk one at a time and beat well.
5.In a separate bowl, sift the flour, baking powder and salt.
6.Add flour mix into the batter until well combined ( use a big spoon to mix this )
7.Whisk green tea in with the milk and add slowly until well mixed.
8.Fill cupcake papers with the batter until 3/4 full. ( If you want them to be flat on top, fill only 1/2 full. I used cupcake papers + cupcake pan )
9.Bake for about 12-18 (Adjust the time for the size of your cupcakes)
10. Take out from the tray and frost after it gets cool.

Matcha Frosting

+ Ingredients +

*110g Butter at room temperature
*1 tbsp of green tea powder
*2 tbsp single cream
*3 cups icing sugar, sifted

+ Directions +

1. Mix cream with green tea powder to make a paste.
2. Beat the butter for not too long, add in the paste with sifted sugar.
3.Whip all together until it’s light and smooth.

*I used piping bag to decorate the cupcakes with icing cream but you can simply use spoon as well.

*Different matcha powders have different strength flavor, so you might want to taste the batter before baking it.
